Johannes Zillinger - Perpetuum 2019

Perpetuum is the top of the pyramid of Johannes' wines. The great Sauvignon, which can easily stand side by side with Sauvignons of Styria or ones from Loire. The grapes come from the Steinthal cru, which is also used for Fumé Blanc, but this one is from selected vines of the oldest age and from the coldest part of the vineyard which is pure limestone. Wine is fermented in amphorae (7-10 days) and then aged in used oak barrels from Champagne for 12 months, under flor. The result is a fresh but complex wine with many textures, which can especially surprising at blind tastings.

A family motto that captures the philosophy of Johannes Zillinger. He named the entry range of wines as Velue. This is the old name of the village of Velm-Götzendorf in the Weinviertel, where his biodynamic winery is spread on 20 hectares. In the vineyards and on the labels you find butterflies, in the rows compost and herbs from which they make extracts for natural sprayings. Johannes, like his father, is a visionary and does things his own way, promoting minimalism in the cellar. In his production you will find uncomplicated and pure wines in Velue range, as well as more complex wines in Revolution and Numen ranges, mostly aged in barrels or clay amphorae.
